The flat blade with a slightly slanted cutting edge is often used without a mallet. It enables a slightly pulling cut with very good chip formation. The flat carving iron can also be used for carving out lettering and ornaments.

Flat carving irons and gouges are versatile carving tools: when carving wood, they are used for everything from the initial rough shape to the finer details. You can use gouges to shape wood freely, carve out convexes and concaves and shape surfaces.

Gouges are available in straight, curved, offset and inverted offset shapes. PFEIL gouges are available in many cutting edge widths and with different stitches. The gouge edge indicates the depth of the curvature of the gouge and is labelled with numbers from 2, very flat gouges, to 11, strongly curved gouges. Stitch 1 is referred to as a flat iron.
